Chicken Bites

These are really tasty, just like Southern Fried Chicken, and very addictive.

4 Chicken Breasts, boned, split, and skin removed.
1 C Finely crushed round buttery crackers ( about 24)
1/2 C Grated parmesan cheese
1/2 C Finely chopped walnuts
1/2 tsp Seasoned salt
1 tsp Dried thyme leaves
1 tsp Dried basil leaves
1/2 tsp Pepper

1/2 C Butter or margarine melted.

1. Cover two baking sheets with foil.
2. Cut chicken into 1 inch pieces.
3. Mix cracker crumbs, cheese, walnuts, seasoned salt, thyme, basil and pepper.
4. Heat oven to 400 degrees F.
5. Dip chicken pieces into melted butter, then into crumb mixture. Place chicken pieces about 1/2 inch apart on baking sheets. Bake uncovered until golden. Takes about 20 to 25 minutes.

Makes 6 dozen appetizers.

I put these in a chafing dish and keep warm, as they are better when eaten warm.
