Texas Caviar

Cracked black pepper to taste
3 15 Oz. cans Blackeyed peas/with jalapenos, drained
3/4 C Canola oil
1/4 C White vinegar
1 Clove Garlic, chopped fine

1/4 C Finely chopped onion
2 Oz. jar Pimentos, drained
1/2 C Picante sauce

Mix all together and let set in the refrigerator overnight. Serve with round tortilla chips.
