Vegetable Baked Brie

1 8 oz Mini Brie wheel
1/2 C Diced onion
1 tbsp Olive oil
1/2 C Diced zucchini

1/2 C Diced red pepper
1/2 tsp Chopped garlic
Ritz Crackers

Split brie in half horizontally into 2 rounds. Place bottom half of Brie in ovenproof crock; set aside.
In skillet, over medium-high heat, sauté onions in oil for 2 minutes. Add zucchini, pepper and garlic; sauté until vegetables are tender. Spoon vegetable mixture over Brie bottom; replace Brie top. Bake at 375° F. for 15 to 18 minutes or until cheese melts. Serve warm as a spread with crackers.
