Yellow Squash-Pecan Bread

1 C Canola oil
2 Tsp. Vanilla
3 Eggs

Whip this together for 1 minute.

3 C Flour
1 C Sugar

1 Tsp. Cinnamon
1/2 Tsp. Baking soda
2 C Yellow squash, grated (raw)
1 C Pecans, roasted

Toss all the above ingredients into the oil mixture and beat until smooth. Pour into a 10″ (greased and floured) bundt pan and bake 40 to 50 mimutes at 350 degrees (until tall and brown). Check with a toothpick to be sure the center of the cake is done.
