Lynchburg’s Favorite Chocolate Groom’s Cake

The groom’s cake is traditionally a chocolate cake served by the groom and his family at the rehearsal dinner or at the wedding reception.

1 1/4 cups sifted all purpose flour
6 tbl. unsweetened cocoa
1/4 tea. baking powder
1/4 tea. baking soda
1/4 tea. salt
1/2 cup butter, softened
1 cup sugar
2 eggs

2 tbl. Gentleman Jack Rare Tennessee Whiskey*
3/4 cup sour cream
dark chocolate glaz (recipe below)
Pecan Halves

1. Grease and flour 9″ springform pan. Combine dry ingredients; blend thoroughly. Cream butter and sugar with electric mixer on med. speed until light and fluffy. Add one at a time; beat well after each addition. Beat in whiskey. Add flour mixture alternately with sour cream. Beat with electric mixer on low speed until combined. Beat at med. speed for 2 min. scraping down sides of bowl as necessary. Pour into prepared pans; smooth top. Bake in preheated 350 degree oven 35 to 45 min. or until cake begins to pull away from sides of pan and tester comes out clean. Cool in pan 10 min. Remove from pan; cool completely on wire rack. Place cake on serving platter. Spread with glaze. Decorate with pecan halves.
2. To make dark chocolate glaze: bring 1/4 cup heavy cream to a boil in small heavy saucepan. Stir in 6 oz. semisweet chocolate, 2 tbl. Gentlemen Jack and 4 tbl. butter; cool. Stir vigorously until chocolate has melted and mixture is thick and glossy. Spread over sides and top of cooled cake.
3. Appproximately 16 SERVINGS
4. Note: Any good whiskey will work but Jack Daniels is the best!
