Sunshine Orange Cake

Diabetic Recipe

Each serving amount: 1 square; Exchanges: 1 starch, 1 fat

1/3 cup reduced-calorie margarine, melted
Brown sugar substitute to equal 1/4 C brown sugar
Sugar substitute to equal 1/4 C sugar
1 egg
1 1/4 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground cinnamon

1/3 cup raisins
2/3 cup unsweetened orange juice
Vegetable cooking spray

1. Combine margarine, sugar substitutes, and egg; beat at high speed of an electric mixer 2 minutes.
2. Combine flour, baking powder, soda, and cinnamon, stirring to blend. Stir in raisins.
3. Add flour mixture to creamed mixture alternately with orange juice, beginning and ending with flour mixture. Beat at low speed of an electric mixer after each addition.
4. Spoon batter into an 8-inch square baking pan coated with cooking spray. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cut into squares to serve.
