Quick and Easy Fruit Cake

3/4 C. Sugar (can be Brown Sugar)
1 C. Water
3 C. mixed dried fruit/light raisins, currants, candied cherries
1/3 C. mixed Candied Peel or Candied Citron
1 tsp. Ground Nutmeg
1/2 tsp. Baking Powder
1 tsp. Soda
1/2 C. Butter
2 lge Eggs-well beaten

2 C. all-purpose flour (sifted)
1/2 C. Brandy, Rum or Whiskey

1. Preheat oven to 350 degrees.
2. Into a large saucepan place sugar, water, fruit, peel, nutmeg, soda and butter. Stir until boiling, reduce heat and simmer for 5 minutes. Allow to cool.
3. Sift flour with baking powder. Add to the fruit mixture together with the brandy. Mix thoroughly.
4. Place into well greased baking pan and bake at 350 degrees for 1 hour. Test with skewer, if it does not come out clean, bake a little longer.
5. Allow to cool in the pan for 15 minutes, then turn out onto cake rack.
6. This cake will remain moist and delicious for weeks. A sprinkle of brandy in the cake storer now and then is good.
