Crockery Pot Festival Sausage

My family devoured this. The original recipe did not call for onions, but, hey, what’s a recipe without onions? Next time I make it, I might add another pound of smoked sausage. We are a family of five, and we had no leftovers.

Editors Note: This is wonderful!! Even my pickiest eaters liked it. I didn’t have cherries so made it without. Was in a hurry so I cooked it on high for about 11/2 hours. Definite repeater.

2 lbs. kielbasa or smoked sausage, sliced
1 cup pineapple juice (I used the juice from a 20-oz. can of pineapple chunks)
1/4 cup lemon juice
3 tbsp. cornstarch
1/2 cup brown sugar
1/4 tsp. salt

1 can pineapple chunks, 20 oz. size (don’t forget to reserve the juice!)
1 large green pepper, cut into chunks
1 large onion, cut into chunks
1/2 cup maraschino cherries, drained

Cook sausage until almost done. Drain grease.

Cook juices, cornstarch and brown sugar until thick. (I brought it to a boil.) Stir in salt.

Put sausage and fruit and veggies in Crockery Pot, then pour juice mixture over. Cook on low until serving time. (I let it cook 4 hours.)

Serve over rice.
