Chicken Creole

Good old, down home, Southern recipe.

3 lb. chicken pieces
1 med. onion, sliced
1 med. green pepper, cut into thin strips
1/2 c. celery, diced
11/2 tsp. salt
1 tsp. thyme

1/2 tsp. paprika
2 tbsp. parsley, chopped
16 oz. canned tomatoes
4 oz. canned sliced mushrooms, drained

Combine all ingredients in Crockery Pot. Cover and cook on low 8-10 hours (high 4-5).

Serve over rice. Add a green salad and your favorite rolls and you have a delicious meal.
