Pizza Beans

Kids love these pizza flavored beans.

1 lb. pinto beans
31/2 c. water
4 chopped tomatoes
1 chopped onion
1/4 c. chopped red or green bell pepper
1 clove garlic, crushed
1 tsp. salt
1/2 tsp. dried oregano

1/4 tsp. dried rosemary
1/2 tsp. dried basil
11/2 c. Mozzarella cheese, shredded
1/4 c. Parmesan cheese, grated

Rinse beans and remove anything that is not a bean. Soak beans in water overnight at room temperature.

In a Crockery Pot, mix everything EXCEPT the Mozzarella and Parmesan. Cover and cook on high 6 to 7 hours or until beans are tender.

Top with Mozzarella, then with Parmesan cheese. Cover and cook another 10 minutes or so until cheese melts.

Makes 10-12 side dish servings or 6-8 main dish servings.
