Hearty Bean Soup

Crockery Pot cooking must have been invented for men. It takes so little time and doesn’t have to be tended constantly. Married or single, Crockery Pots were made for men.

3 c. chopped parsnips
2 c. chopped carrots
1 c. chopped onion
11/2 c. dry great northern beans
5 c. water
11/2 lbs. smoked ham hocks or ham shanks

2 cloves garlic, minced
2 tsp. salt
1/2 tsp. pepper
1/8 tsp. hot pepper sauce (use up to 1/4 tsp. or to taste)

In a 5-quart Crockery Pot, place parsnips, carrots and onion. Top with beans. Add water, ham, garlic, salt, pepper and hot pepper sauce. Cover and cook on high for 6-7 hours or until beans are tender. Remove meat and bones when cool enough to handle. Cut meat into bite-size pieces and return to Crockery Pot; heat through.
