Tomato-Bean Stew

This is a simple, but good, low-fat meal.

4 slices bacon, crisply cooked, crumbled
8 oz. dried bean blend, sorted, rinsed (11/4 cups)
1/2 c. sliced celery
1/2 c. chopped onion
3 c. water
1 can whole kernel sweet corn, undrained (151/4 oz.)

1 pkg. taco seasoning mix (11/4 oz.)
1 can. diced tomatoes, undrained (28 oz.)
2 tsp. sugar

1. In 3 1/2 or 4-quart Crockery Pot, combine all ingredients except tomatoes and sugar; mix well.

2. Cover and cook on low for 10 to 12 (high 5 to 6) hours or until beans are tender.

3. Add tomatoes and sugar; mix well. Cover and cook an additional 30 minutes or until thoroughly heated.

Yield: 6 servings (1 1/2 cups each)
