Bacon-Wrapped Shrimp with Chili Dip

This is one of Kevin’s favorite Appetizers and Snacks. Now bear in mind that this is not a tongue-toasting hot recipe just because it contains the word chili. Instead, it is a wonderful yet easy to prepare shrimp appetizer with a moderately spiced chili dip. This one is NOT hot so don’t worry! For those who like it hot, simply use a tiny bit of cayenne pepper in place of the chili powder.

Prepare the Chili Dip first and store in the refrigerator.

Chili Dip
3/4 C Mayonnaise
3 tbsp Chopped sweet pickle
1 tbsp Chopped pimento
1 tbsp Onion salt
1 tbsp Chili powder
2 tbsp Finely chopped onion
1 Hard boiled egg, sliced

Combine the mayonnaise, chili powder, sweet pickle, pimento, onion, onion salt and egg in a nice serving bowl; mix well and refrigerate.

8 Strips bacon, cut in half
1 Clove garlic, crushed
1/2 C Butter, melted
1 tbsp Chili powder

1. In a small bowl combine butter, chili powder and garlic.
2. Dip each shrimp in the butter mixture, wrap with bacon and secure with a toothpick.
3. Place the bacon-wrapped shrimp under a broiler and cook until bacon is done; about 6 to 8 minutes.
