Cottage Scrambled Eggs

1 1/2 tbsp Oleo
1 1/2 tbsp Flour
1/2 C Milk
5 Eggs
1/2 C Cottage cheese
1/4 tsp Salt

Dash of pepper

Melt butter or oleo in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.
Combine eggs, cottage cheese, salt and pepper; beat well and stir into white sauce. Cook, stirring often, until eggs are firm but still moist.

I usually add some chopped, sauteed onions and maybe some ham or sausage.

4 to 6 Servings
