Bushunter’s Beef Or Turkey Jerky

I’ve experimented with this to get it just right for my taste. I try not to make more than 10 lbs at a time as this causes pain in my jaw trying to chew that much!(G) Really, get about a three lb. roast. I select a bottom round roast with as little fat as I can find, then have the butcher remove the rest of any fat that remains, have him slice it into 1/4 in. thick pieces, across the grain if possible, with the grain makes for chewy jerky. I use a plastic bowl to mix the following ingredients and use the same bowl for marinating the beef in the refrigerator for 24 hours.

Beef Jerky
1 tsp seasoned salt
1 tsp fresh ground black pepper
1/4 to 1/2 tsp Cayenne pepper (Depends just how hot you like it!)
1 tbsp oregano
1 tbsp garlic powder
3 tbsp brown sugar
1/2 cup Worcestershire sauce
1/2 cup soy sauce
1 tbsp liquid smoke

Mix all the ingredients in the bowl and lay the pieces of meat in, one at a time and press it down so that the each piece is covered with marinade before laying the next piece in on top of the last. When they’re all in, put it in the refrigerator and let it marinate for 24 hours.
When you’ve watched that clock tick ever so slowly for what seems to be an eternity (don’t forget, you need to let it marinate for the full 24 hours.), cut it into strips about 1 1/2 inches wide and lay them in your dehydrator for what ever the manufacturer recommends. Make sure the pieces don’t overlap.

I understand this could be done in an regular oven if it was on no more than warm, and you laid the strips directly on the racks.I haven’t tried that but have heard it works also.
The toughest part is smelling them drying and leaving them alone till they’re done! Makes my mouth water just thinking about them.

This stuff will send your taste buds into orbit! I had the Deli department. slice 1 1/2 lbs. of processed turkey breast into 1/4 in. thick slices and marinate them the same way I did the beef although the marinade recipe is different.

 

Turkey Jerky
1/4 cup soy sauce
1 tbsp lemon juice
1/2 tsp garlic powder
1/8 tsp ginger
1/4 tsp onion powder

Marinate for 24 hours just like the beef recipe and dehydrate the same.
Watch out! You’ll be munching this stuff rather than eating lunch!
This is so good, you’d think it was illegal!
