Steak au Poivre

4 Beef Strip Steaks
1-1/2 tbsp. cracked black peppercorns
1 tsp. salt

3 tbsp. butter
1 C heavy cream

Rub the pepper and salt onto both sides of each steak. Heat 2 tbsp. butter in a large frying pan or electric skillet. Cook steaks on medium high heat 4-1/2 to 5 minutes per side for medium rare. Place steaks on a platter and cover with foil. Add heavy cream to the pan and gently heat until liquid is reduced making sure not to boil. Add 1 tbsp. butter to pan, combine. Serve sauce over steaks.
