Hot Tomato Sandwich – Diabetic Recipe

Serve with a small cup of soup and enjoy a cool and delicious lunch.
I use Miracle Whip for the dressing and use sliced roma tomatoes

1 slice whole-wheat toast
1/4 cup lowfat ricotta cheese
2 slices tomato, 1/8-inch thick
1/2 tsp. Dijon mustard
1/4 tsp. chopped fresh basil

Spread the ricotta cheese on the wheat toast.
Top with the tomato slices.

Spread the mustard and fresh basil over the tomato.
Broil until the tomoto is hot.

Makes 1 sandwich with 159 calories and 6 fat grams.
Diabetic exchange: 1 lower fat meat, 1 starch.
