Peasant Soup For One

This tasty dish uses less sugar, salt and fat. Recipe includes Diabetic Exchanges.

1 Boneless skinless chicken breast half (4 ounces), cubed
1/4 C Chopped onion
1 sm Potato, cubed
1 sm Carrot, sliced
1 C Chicken broth
1 Garlic clove, minced

1/4 tsp Dried tarragon, crushed
1/8 tsp Salt, optional
Dash pepper
2 tsp Chopped fresh parsley

Coat a saucepan with nonstick cooking spray; brown chicken over medium-high heat. Add the next eight ingredients; bring to a boil. Reduce heat. Cover and simmer for 20-25 minutes or until vegetables are tender. Sprinkle with parsley.

Yield: 1 serving

Diabetic Exchanges: One serving (prepared with fat-free low-sodium broth and without salt) equals 3 very lean meat, 2 vegetable, 1-1/2 starch; also, 280 calories, 95 mg sodium, 73 mg cholesterol, 31 gm carbohydrate, 31 gm protein, 3 gm fat.
