Chocolate Popcorn

12 C Popped popcorn
1 C Unsalted peanuts, optional
1 C Granulated sugar
2/3 C Light corn syrup
2 tbsp Margarine or butter

6 sqs Semisweet chocolate
1 tsp Vanilla extract

1. Preheat oven to 250 degrees. In large shallow roasting pan, mix popcorn and peanuts.
2. In a heavy 2-quart saucepan, cook sugar, syrup and margarine over medium heat until mixture boils, stirring constantly. Stir in chocolate. Stirring constantly, cook 5 minutes or until chocolate is completely melted and mixture is very thick. Remove from heat. Stir in vanilla. Pour over popcorn. Stir to coat well.
3. Bake 1 hour, stirring occasionally. Cool in single layer on baking sheets or foil. Store in tightly covered container.
